Marley Spoon: Steamed Salmon with Herb Mayo & Avogolemono Soup + $30 Off

Salmon Recipe
Steamed Salmon with Herb Mayonnaise and Roasted Vegetables
I’ve really enjoyed the Salmon dishes I’ve tried from Marley spoon and this one looked super fresh and easy.

Our usual fresh ingredients:

Potatoes Asparagus
We start by roasting some potatoes on a cookie sheet for 15 minutes then we add in asparagus and roast again for about another r10.

Meanwhile we season our salmon with salt and pepper, and make an aluminum foil packet.

We prep our scallions, capers, dill, parsley and lemon then make our green mayonnaise.
When we’re done, the dish looks like this:
Herbed SalmonTaste: Fabulous!
This dish was easy, delicious and super fresh.  I thought the mayo would be too heavy but the sauce was perfect with the fish.   You could easily make this on a casual weeknight or for a dinner party.  This one was a winner.
Portion Size: Good. Excellent size on the salmon, but we could have used a few more potatoes.
Good for Entertaining?: Yes, but I’d probably turn use Greek yogurt in lieu of the mayo.  As a side I’d go with a Mediterranean spin and do a feta and orzo salad.  For cocktails I’d go with something light, like a white wine spritzer.  For an appetizer, I’d make some kind of fancy hummus, like this amazing looking Farmer’s Market Hummus from Spoon Fork Bacon.  Dessert would be a lemon tart with fresh raspberries.

Avgolemono Soup with Orzo and Meatballs
I’m always on the hunt for new and interesting soup recipes and this one featured meatballs so I had to try it out.
(Plus I always feel extra proud when I manage to successfully prepare a recipe that I can’t properly pronounce.)

More fresh ingredients:

Scallions
Vegetable prepping time.  We also start some chicken broth and water boiling, and soak some panko. (Why does “soak some panko” sound vaguely dirty?  Like it’s code word for weird Japanese porn.)
Next we combine our beef, scallion whites, soaked panko and seasoning then get to rolling some balls (Well, that one’s a little more obvious.)
We throw some orzo into our broth, then we add the meatballs.

We make a mixture of eggs and lemon juice, then we temper it by mixing in some hot broth. We remove the soup from the heat, slowly add in the egg mixture.  Season it to taste and we’ve got our hard-to-pronounce Greek soup.

The salad is just some thinly sliced romaine with scallion greens and a dressing of lemon juice, olive oil, salt and pepper.

Taste: Good, but a touch sour
Portion Size: Generous
I liked this soup, while my boyfriend found it to be too sour.  I did agree that a lighter touch with the lemon would have made the soup much tastier.  The salad seemed pretty unexciting and like a bit of an afterthought.  Some tomatoes or feta would have made it feel more like a more satisfying side dish.  This soup was certainly not a terrible dish, but it would have definitely benefited from some tweaking.
Good for Entertaining?: Probably not.  The soup wasn’t compelling enough for entertaining and there just wasn’t much to the side salad.

Verdict:
Like!
I adored the salmon recipe.  It was exactly the kind of recipe I want from this subscription – fresh, fast and easy to make again.  The soup wasn’t a huge hit, but it wasn’t bad either and since I’ve never made a Greek soup before it was a fun thing to try out.
